Who loves eggplant parm as much as I do? It’s my absolute favorite comfort food!

Over the years I stopped making eggplant parm because it can be incredibly time consuming to bread and fry the eggplant slices plus make sauce! ⏰
.

My eggplant is BACK in action since I discovered baking the eggplant makes this dish MUCH healthier and cuts the time in HALF without sacrificing flavor!

For vegan DIY cheeses I recommend the almond ricotta recipe from the @minimalistbaker and my fav mozzarella recipes in order of least to most complex from: @groenteboertje_official @gourmandelleblog and @schoolnightvegan
.

My favorite store bought brand for ricotta is @kitehillfoods and for mozzarella it’s @violife_foods mozzarella shreds!

#vegantravel #greece Happy Wednesday day everyone! This week I’m working 3-11 every day, which means I’m trying to ⚖️ rest and productivity and it is NOT easy (Monday I ran errands all morning and made this Butternut Squash #mealprep, and yesterday I laid on the couch 😂)
.

This was so flavorful and sweet from roasting the squash it didn’t require any dressing!  Other than chopping the squash, which I decided is literally the worst vegetable to cut on the 🌎, it only took about 20 min!

Ingredients:
-Butternut squash
-Broccoli
-Kale
-Quick cook brown rice (I had leftover from another meal, so that’s why you see white beans mixed in)
-1 tsp thyme
-1 tsp sage
-1 tsp onion powder
-1 tsp salt
-1/2 tsp pepper
-EVOO or oil of choice

Pre heat oven to 400 degrees, chop your veggies, drizzle and lightly coat with extra virgin olive oil. In a small bowl combine seasonings. Sprinkle on vegetables to your liking. Roast for 20 min or until veggies are as crisp as you like! Cook grain of choice according to package instructions while veggies cook. I love brown rice or quinoa for meal preps. I found that my favorite grocery store now sells quick cook brown rice in bulk! So convenient!

This meal prep is #wholefoodplantbased, simple, healthy, and most importantly delicious! I’m having it for lunch every day this week and am not even close to being sick of it! Best of all it’s #zerowaste which is probably my favorite part. Happy Cooking 😊
